- Whole wheat flour: 1/2 cup
- All-purpose flour: 1/2 cup
- Quick rolled oats: 1/2 cup
- Brown sugar: 1/2 cup
- Cinnamon: 1.5 tsp
- Baking powder: 1 tsp
- Baking soda: 0.5 tsp
- Salt: 1/4 tsp
- Soymilk: 3/4 cup mixed with 1 tsp. vinegar
- Canola oil: 1/4 cup
- Finely grated carrots: 1 1/2 cups (approximately 3 carrots)
Directions:
1. Preheat the oven to 375F or to 325F for a convection oven.
2. Mix the ingredients in the order of the recipe until smooth.
3. Bake for 40 minutes or for 25 minutes in a convection oven.
4. Cool a few minutes for easier removal.
